A great recent example of this was a successful group of entrepreneurs who had created a company that will do $10-12 million in revenue at their system integration business (read: services business) in 2011 after having done $5 million or so in 2010 and $2-3 million in 2009. You own the IP you create. But it might not.

You can’t afford to hire three developers to add features and bugs. As for the employer, I would say don't compete with your employer and don't come close to using any IP of theirs. You could make a whole site dedicated to people holding down a day job but also seeking to make their own IP or buisness come into profit.

However, there is the concept of "mutual" NDA, which should give your IP equal protection if you share any of yours. If someone hired you, would you have your lawyer look over the NDA?
