My colleague here at Belmont University, Jose Gonzalez, has been working with a group of students to assist honey farmers in Guatemala. They all spent time in Guatemala over part of the Christmas break and are now back working on plans to help these farmers. Over 85% of the population of Quiche lives on less than $2 a day.

I've volunteered and worked for non-profits in a variety of countries on projects ranging from an organic olive oil operation to a permaculture demonstration site to a forestry project in western Guatemala's mountains. They need to quickly equip their managers to understand and automate the way work is handled and resources allocated.

Bonus points for the fact that they partner with the social enterprise Vision Spring to facilitate training for optometrists and eye glass manufacturers in the same countries that they donate glasses to (India, Guatemala, and Bangladesh to name a few), so the communities also receive opportunities for sustainable income.
